AUSTRALIAN WAGYU BEEF
Australian Wagyu Beef shares many characteristics with authentic Japanese Wagyu, such as a tender texture and intricate marbling, but it has some of its own distinctive qualities that make it especially exciting to indulge in. Discover one of the most unique and sought-after types of meat from the other side of the world with this selection of Australian Wagyu Beef.
Australian Wagyu cattle have bloodlines that can be traced back to Japanese Wagyu cattle. These Purbred Australian Wagyu have at least 93.75% pure Japanese Wagyu cattle genetics. The special grain feed is sourced locally in Australia, and a shorter feeding time produces cattle which are generally smaller in size compared to Japanese Wagyu. While Australian Wagyu beef shares some key similarities with Japanese Wagyu, including exquisite tenderness and marbling, there are some distinctive features that make Australian Wagyu unique. Notably, Australian Wagyu is slightly less buttery in flavor compared to Japanese Wagyu, giving it a slightly leaner, meatier taste.
BERKSHIRE PORK
What’s the difference between regular pork and Berkshire? The main differences between regular and Berkshire pork are the taste, meat quality, tenderness, and fat. Regular pork comes from the American Landrace pigs versus the Japanese or English hogs. The flavor of Berkshire meat is much more juicy, flavorful, and tender than that of other pigs. Berkshire pork is renowned for its richness, texture, marbling, juiciness, tenderness and overall depth of flavor. It is thought by many to be the Kobe beef of pork. It is said to have a very specific taste, not generic and bland or mild like regular pork.
Berkshire pork looks and tastes like no other pork meat. Unlike commodity pork or “The Other White Meat”, Berkshire pork is visibly different. It has a darker, richer color with an abundance of intramuscular marbling- comparable to prime beef. Its flavor is distinctive with an unparalleled tenderness for pork.
